LO’s party went off
without any with a few glitches. Not that they were noticeable. LO had a great time with her cousins and the Mickey Mouse themed party was a hit! I had floral centerpieces that my best friend made (she’s a lady with many, many talents!) and I had little goody buckets for each kid who attended.
The main dish was my 7 bean vegan chili. The recipe itself is vegan, but I did add cheese and sour cream to the actual mix because I love sour cream and cheese… I also didn’t take any process pictures so this is going to be a quick post with the ingredients and the very simple steps. I used a lot of canned ingredients as I didn’t have time to prepare everything. Kids’ parties are insanely busy and hard to prepare.
Prep Time: 15 minutes Slow Cooker Time: 2 hrs 20 mins
Here is what you need;
- 1 can of crushed tomatoes
- 1 can of diced tomatoes
- 1 package of taco seasoning
- 1 tbsp dried chili peppers
- 2 cans of 6 bean medley (Blue Menu is what I used)
- 1 can of black pinto beans
- 1 yellow onion
- 1 package of Yves Meatless Ground Round
- 1 clove of garlic – crushed and chopped
- pepper to taste
That is pretty much all you need. You can add whatever you want to your chili, this is what I used for mine though! Ok so the first thing to do is add all the canned ingredients to your slow cooker. Don’t drain the tomatoes but loosely drain the canned beans. Put the slow cooker on high for an hour, stirring occasionally.
In the second hour, stir in your taco seasoning, pepper and crushed chili. In a separate pan, caramelize your onions and add in the garlic and the veggie ground. When everything is nicely browned, add it to the crock pot and stir everything in together. Leave it for another 20 minutes and then it’s ready to serve.
I cut out little bread bowls and made them look like Mickey Mouse (sort of… well I tried!)
I then un-veganized it by adding sharp cheddar and sour cream. It was delicious and a hit at the party.
LO’s birthday actually isn’t until this upcoming Monday, I just can’t believe she is going to be TWO YEARS OLD! She shares the day with my own father. What an amazing and bright child she has become! Happy 2nd Birthday LO!
