Update*** If you recall, we have acquired a little kitten who at the time was no more than 8 weeks old. I feel as if Wicket has always been with us. I have never had trouble introducing animals to each other. When I first brought Kaiya home, she was 9 weeks old and I had a clowder of 5 cats/kittens, a ferret and a myriad of rats/gerbils/hamsters to introduce her to. I pretty much threw Kaiya to the lions (well little house lions) and as soon as the oldest cat Brodeur sniffed her out, she was accepted by the cats within minutes. So it was no surprise to me that Wicket adjusted to our family quite rapidly and has adapted to our toddler’s antics.
Now onto this post! During this time of year, the thing to do on cold days is to have tomato soup and a grilled cheese sandwich. I don’t like tomato soup, so I like to gussy up my grilled cheese sandwiches. A few weeks ago I posted about my sweet grilled cheese and it was delicious! This time, I made my mum and I pizza grilled cheese! Oh how yummy to merge two of my favourite things together!!
What you need (makes 1 sammich!);
- 4 slices of mozzarella
- 4 pepperoni
- 2 white bread slices
- 1 1/2 tbsp pizza sauce
- 1 tbsp chopped green peppers – optional
- 2 tbsp butter
Heat your pan on medium (I go slightly higher temps because I like darker browned sandwiches). Slice your mozzarella and and butter your bread.
When your pan is hot enough, add one slice of bread and lay your slices of cheese as you please. Add pizza sauce, pepperoni and peppers. Lastly, add your last slice of bread.
Flip your sandwich when the bottom piece has toasted to your desired brown-ness and lower the temp when you flip the sandwich to let the cheese melt a little more. When the sandwich is cheesy, melty and toasted, plate it and cut in half.
