I was going to post last week but between going to see Bibi and taking care of one sick LO, I was super busy and tired . I was also not feeling very well so I took some time to recuperate.
As promised I have a picture of how OH’s mother’s cake turned out from last post. It was fantastic!
In fact it went so well, I tried it again with Bibi but a more Christmassy version! They are super fun to make and add a little pizzazz to a regular boxed cake.
Yesterday I was feeling like I really wanted a grilled cheese. Not just any grilled cheese sandwich though – a sweet grilled cheese sandwich and here is what you need.
- 2 slices of soft white bread – believe me it’s better this way
- 1/3 yellow onion – sliced
- 1 tsp brown sugar
- 1/2 tbsp canola oil
- 1 tbsp butter
- marble cheese – or any type of cheddar
- A dash of garlic powder
I took my pan and let it heat up (on medium) for a bit. I then added oil and the onion slices (about 1/3 of a medium yellow onion). Let them caramelize for a bit before adding the brown sugar.
While the onion slices were caramelizing, I buttered 2 slices of white bread. You could use whole wheat or whole grain bread, but it just doesn’t taste the same and always, always use butter… it just toasts the bread better. I placed the buttered side down in the still hot pan and layer with 4 slices of cheese.
Add the onions, garlic powder and the next layer of cheese. Let the open sandwich brown for a bit and place the last slice of bread buttered side up on top. Flip the sandwich to toast the other side. Lower the heat of the pan to let the cheese melt nicely.
When the sandwich is nice and done, plate and enjoy the sweet goodness of the grilled cheese.
