I’ve become a Pinterest addict. I’ll admit it, I have about 10 boards that have a plethora of ideas I want to try out and some of them I will definitely fail at.
This one in particular I decided to try out for OH’s mother. Her birthday is this Friday but I am going to Toronto to see Aunty Bibi for Christmas in November (our new thing since Bibi moved back home). So I tried my hand at making box cake into something fancy.
What I used for the cakes;
- 1 box of white cake
- 1 box of chocolate cake
- 5 eggs
- 1/8 C + 1/4 C of canola oil
- 1 3/4 C water
First I turned on the oven to 350° F and turned on my mini cake pop maker. Then I followed the instructions for both cake mixes.
I made the round white cake balls first. Some turned out better than others, but I got as many good ones as I needed so I used the best ones. Don’t forget your non-stick baking spray!
I then evenly placed the cake balls into a circular pan and poured the chocolate cake batter into the pan, making sure to cover each one. I put the pans into the oven for 15 – 20 minutes (until a toothpick comes out of the chocolate part only cleanly).
I got dimples where the cake balls were but that didn’t matter as I was cutting the top of one to make it flat for the other layer to go on top. While waiting for the layers to cool, I made some vanilla buttercream frosting.
What I used for the frosting;
- 1 2/3 C icing sugar
- 1/2 C vegetable shortening
- 1 1/2 tbsp unsalted butter
- 1/2 tbsp milk
- 1 tsp salt
- 1 1/2 tsp vanilla
After letting the layers of cake cool completely, I got to cutting, icing and decorating the cake. I’d say it is a success so far, I didn’t have any green food colouring to make grass so I mixed green sugar sprinkles into the icing for the top of the cake.. Hopefully later today it is as tasty as I think it will be!
I will post a picture next week when we cut into it to see the results of the white polka dot cake.
