my crock pot – cooking spaghetti squash

The days are getting cooler for the most part. My birthday was spent with lots of friends and family. OH got me riding lessons for my birthday, which was very much needed! I am so out of shape it isn’t even funny.

LO has been going to daycare on Thursdays and Fridays which has given me a little free time to pick up extra shifts and well sometimes go to an afternoon movie date with OH. We get some time to ourselves or to play video games while LO plays with children close to her age (she’s almost 2), gets fed amazing lunches and gets to nap in her own Frozen big girl bed.

Since Fall has come full force and I love using the crock pot, I tried my hand at cooking a whole spaghetti squash in my large slow cooker.

Here’s all you need;

  • 1 or 2 spaghetti squash
  • a sharp knife

Take your spaghetti squash and stab various holes in it.

Place the squash in the crock pot and cover it. Put it on high.

Cook for 2 – 2 1/2 hours on high. Do your own thing, read a book, finish a mission in Assassin’s Creed. When it’s done, remove and cut in half.

Like a pumpkin you will have to “gut” a bit of it. I use the seeds to cook in my vegetable chow mein. Scrape your squash on the inside to the skin. Little noodle looking bits that are tasty with a marinara sauce or whatever you want to use it for.
