This is a really easy recipe. Essentially you really only need 3 ingredients (eggs, banana, protein powder) but I added a bunch more to make them more my own.
As some of you may know, I have recently ran the CIBC Run for the Cure. I have until the end of the month to raise money but the run was on October 4th at the Toronto Zoo. It was a cool morning to run and I had a bit of a cold, but I did alright and got an average time. The animals were so calm and happy to watch us running by. The lions chased some of us as we ran by. All in all it’s a great experience and I am definitely back again next year.
So here is what you need for this delicious breakfast recipe;
- 1 ripe banana
- 2-3 eggs – I used 3
- 1/2 scoop protein powder
- 1/3 C oatmeal
- 1 tbs ground flax
- 1 tbs peanut butter
First thing you can do is take out a blender to make it easy. Add in banana, eggs, protein powder, oatmeal, flax and peanut butter. Heat your pan to med-low and add a spray of extra light virgin olive oil.
Blend everything until it looks like a smoothie and pour some of the blender contents into the heated pan.
Flip pancakes and make as many as you desire! My batch this time around was 6 small pancakes. Top them with whatever you please and enjoy.
They truly were delicious though! I was so happy and full. They are definitely something that is great for pre or post workouts and you can modify them to whatever you want!
