OH is gone to Toronto until late tomorrow night and I am left alone with LO. I took most the week off from work and thought it would be a good time to enjoy some mother – daughter time with LO. Also that means I get to watch whatever I want on Netflix and play whatever I want on the PS4 in my downtime. It also means I get to sleep in and not get up for my 5 am shifts. SO NICE!
This is a salad that is perfect to bring to a BBQ that you are invited to. It is easy to double the recipe and modify it to your tastes. OH, LO and I went to Fitzroy Park with this salad for lunch with his parents and uncle (they were camping there). Here is what you need;
- 4 ears of corn
- 1/2 red onion – diced
- 1 red pepper – diced
- 1/2 orange pepper – diced
- 1/2 yellow pepper – diced
- 3 small cucumbers
- A handful of chives – chopped fine
- 3 tbsps olive oil
- 1 lime – quartered
- salt and pepper to taste
First cook the corn and shave the cobs. This was my first time shaving corn off the cob.
In a large serving bowl, combine corn, onion, peppers, cucumber and chives and mix.
In another bowl whisk together the oil, juice your lime, salt and pepper. Add to the salad and mix thoroughly.
I also brought this to my cousin’s 21st birthday celebration. The salad went well with the pulled pork we had for dinner.
