Apparently July is National Ice Cream Month! Well according to former President Ronald Reagan it is. What do you do for National Ice Cream Month when you have a brand new, unused ice cream maker? Make ice cream of course!
This ice cream is dairy free and honey is used as a sweetener. It is Coconut Banana Ice Cream!
Here is what you need;
- 2 C coconut milk
- 1/2 C honey
- 1 tbsp banana flavouring (or less if you want a lighter flavour)
- 1/8 tsp of salt
In a large bowl, add 2 cups of coconut milk, 1/2 cup of honey, 1 tbsp of banana flavouring and 1/8 tsp of salt. Whisk all ingredients together.
Once honey is thoroughly whisked into the soon to be soft serve ice cream (think Dairy Queen consistency) pour into ice cream maker. My ice cream maker has a bottom that needs to be put in the freezer for at least 24 hours. Turn on the ice cream maker per instructions. I let it run for about 45 minutes to an hour.
When the ice cream started thickening, I transferred it into a Pyrex container.
I covered it with saran wrap and stuck it in the freezer for 12 hours.
After 12 hours, the coconut ice cream is a nice soft serve consistency. It has a nice (to me) banana flacvouring and as someone who isn’t a coconut fan, I found it not overpowering in flavours – just the right sweetness and taste.
