My mom gave me rhubarb and as I am experimenting with it (I could just eat it raw), I came up with this 4 ingredient recipe which I enjoyed making (Well, I made it 5 ingredients by adding chocolate chips last minute), because it was so easy!
So here is the list of ingredients;
- 1 1/4 C Nutella
- 1/2 C + 2 tbsp All-purpose flour
- 2 Lg eggs
- 1/2 C Chopped rhubarb
- *Optional* 1/2 C Chocolate chips
I would also like to mention that I acquired my great-grandmother’s stand mixer. The thing is older then my own mother!
First I set the oven to 350° F and then I crudely chopped up the rhubarb and placed it in a food processor to make it finely chopped/minced. I think I had slightly more than half a cup.
Then I plugged in the mixer and added 1 1/4 cups of Nutella.
And a 1/2 cup + 2 tablespoons of flour.
Then I turned on the mixer and while that was mixing I added the eggs and chocolate chips.
I poured the brownie mixture into a silicone pan and baked it in the oven for about 25 minutes.
Let cool, serve and enjoy!
Now this brownie is crumbly and dense. It has a nice subtle flavour to it, in fact some people couldn’t even taste the rhubarb because I had chopped it up so fine with the food processor.
I gave some of the brownies to co-workers and friends who also enjoyed them. I might experiment a little more with this recipe to see if I can improve it so keep an eye out for an update on these guys!
