Have you ever bought a hard taco kit and had the shells broken when you open the box?

What a bummer!!

Well here is what you can do to save taco night! And by the end of the post, with some simple ingredients added will turn into something delectable!

Look at this!

Here is what I used/had at hand;

  • 1 taco kit – with hard shells
  • 1.1 lbs ground turkey
  • 1 1/4 C shredded cheese
  • 1/4 C ketchup
  • 1/2 tbsp dried garlic
  • 1/2 tbsp dried onion
  • 1 Lg egg
  • 1 C bread crumbs
  • 2 tbsp warm water
  • 3 1/2 tbsp of Black Diamond cheese spread – you can use cheese whiz or nacho cheese sauce

Preheat the oven to 350 degrees Fahrenheit and in a large bowl add meat, taco seasoning packet, ketchup, onion & garlic, bread crumbs and egg.

Mix all ingredients together thoroughly. I used my hands for this, remember to wash them before and after handling raw meat and eggs.

Take half the meat mixture and layer it in the bottom of a ceramic or glass dish.

Get your cheese and water and put it in a microwavable dish. Microwave on high for 15 second intervals, stirring in between. Do this until mixture is smooth. Pour half the mixture onto the meat.

Add in the other half of the meat and pour the rest of the cheese sauce onto the meat.

Pop the loaf into the oven for 15 – 20 minutes. Take it out when top layer is browned (keep the oven on) and crush the taco shells to make them into large crumbs. Add them to the top of the loaf.

Add your grated cheese to the top and pop your loaf back into the oven for another 5 – 10 minutes.

I served it with some raw veggies and it was super delicious. It was even good re-heated the next day!
