I like making cupcakes for birthdays. They are the perfect size and really who doesn’t like cupcakes. Recently, I have not been able to make cupcakes from scratch (I like a lot of counter space and we have limited), so I get the box cake make some cupcakes and then make butter cream icing.
This is the simple way to make butter cream icing and I did a little trial and error with it. You need it to be thick but not chunky and you need it to have some sort of flavour to it. This one I made was Cotton Candy flavoured.
Here’s what you need;
- 2 cups icing sugar
- 1/2 cup of butter (I used reduced salt – room temp is best)
- 1 packet of Cotton Candy flavouring
- 2 tablespoons of milk (I used homo milk – it was all I had)
First things first, you add 2 cups of icing sugar and 1/2 cup of butter into a large bowl.
Mix butter and sugar together. It will get chunky. You can use a beater or mixer, I prefer using a fork.
Add in flavouring. If you are going with vanilla, add in 1 1/2 teaspoons.
Add in 2 tbsps of milk. Continue to stir.
Stir until smooth and creamy. If too runny, add in 1 tbsp of icing sugar to thicken.
Consistency should be thick but spreadable. Think peanut butter-ish. Now to decorate cupcakes. I just used a spatula and slathered it on. I was making pirate themed cupcakes so I wanted a wavy look. Everything turned out like this!
