the easiest crock pot meatballs

As LO gets more and more mobile and OH and I both work and keep the apartment out of disarray, I have been relying more and more on my crock pot. Slow cooking is probably the best thing ever for me, with a mobile child. I’ve slow roasted a whole chicken in it before.
I love meatballs – they go great with rice, on kaiser rolls, even just as a finger food at a party! I have several easy peasy dishes, the one I am sharing this week costs about $10 and is served on rice or on buns.
What you need;

  • Box of frozen meatballs – I used chicken meatballs from Walmart (60 count) for $8.00
  • BBQ Sauce – I had Diana Chicken & Rib for $1.25
  • 1 Bell pepper – I used a green pepper as they were on sale for $0.88/lb
  • 1/2 a Sweet onion – you can really use any onion, again used this because they were on sale for $2.77 for a 3lb bag


I crudely chopped up the onion and the green pepper and put them aside.


I then poured a little bit of the Diana Sauce into the bottom of the crock pot like so.

I added the meatballs, poured about 1/2 the bottle of Diana sauce on top and added the chopped veggies.

Putting the crock pot on low, I had 3 1/2 hours to play with LO and make some fancy baby hats.

This is what our dinner looked like that evening (minus the side fresh veggie platter). Even LO ate some cut up meatballs!


This lasted us quite awhile. OH had it for lunch 3 times and once for dinner and I packed some away in the freezer for a day when I don’t want to cook a meal.

Yes, I could’ve shoved this in the oven for about 1/3 of the time, but having a mobile child who gets more and more mobile each day, I have less time to sit and watch the oven. The crock pot is an easier way for me to manage time around LO.
