fast prep friday – lunch date

So I haven’t posted in awhile due to me having a slight accident that resulted in a pretty serious infection and I’m still consulting a surgeon about repair on my hand. I am quite happy and doing just fine though.

Yesterday my BFF came over for a visit. I decided to make pizza as we used to eat pizza after walking home from school. I wanted a quick dough to make from scratch and I don’t tend to have yeast on hand so I grabbed the following ingredients;

  • 2 cups of unbleached all purpose flour
  • 2 tsp of baking powder
  • 2/3 cup of water
  • A pinch of salt (about 1 tsp)
  • 1/4 cup of oil
  • 1 1/2 tbsp of butter

So first I preheated the oven to 425°F and then got out my largest bowl and threw in the dry ingredients together and added water. Mix up the ingredients until the dough feels a little bit sticky. I kneaded the dough on a floured cutting board, but you can do it on a clean counter too. Your dough should no longer feel sticky after this step.

Get your cast iron frying pan (I coated mine with butter) to make a nice deep dish. Spread the dough evenly in the pan and use a basting brush to coat the dough.

Add sauce and toppings and slide into oven

Cook for 15-20 minutes and broil for about 2-3 minutes to make cheese and edges of crust brown.

Our lunch date went fantastic and LO actually went down for a nap for most of it. We enjoyed yummy pizza while watching most of The Hobbit: An Unexpected Journey.

The only thing that some people might want to do before adding pizza sauce and toppings is to maybe bake the crust a little beforehand to make it a crispy crust. Other than that it tasted fantastic and was not hard to make and quite quick.

Next week I may try stuffed crust and see if that works out for me!
