5 minute veggie and rice stir fry

I have been pretty diligent with posts, most of them are food posts and I do have a couple projects on the go but for now I have another very quick and easy food post.

I woke up at 5 A.M. remembering that OH had his turnover weekend and also that I did not make his dinner and lunches for the next three days, which he says I really don’t have to, but I like doing it while he gets daddy and daughter time (It usually consists of them watching Jake and the Neverland Pirates and the MLB Network). So I scoured my stockpile and got the remaining of the weekly veggies to come up with this little recipe.

You may have noticed that I don’t post recipes and it’s mostly because I don’t use them – I wing it, taste test and hope for the best. This is why having an OH like mine is great because when it comes to food, he will try anything and if it’s not that great, he will tell you AFTER he’s done.

Here is what I had;

  • 1 medium zuchinni
  • 1 small stalk of celery
  • 1 clove of garlic
  • 1 large egg
  • soya sauce to taste
  • 1 tbsp of sesame oil
  • 1/2 tbsp of butter
  • 1 tbsp of worcestershire (I can never prenounce it)
  • bistro express long grain & wild rice – you can also take the extra minutes to boil rice but this was quicker.

I would have liked to have had a sweet pepper and green onion in there, but this was the end of my veggies as weekends are when I get my produce and eggs.


First dice the veggies and cook in sesame oil and butter until they are still a bit crunchy – taste tests are mandatory in my cooking schemes. This is where you can scramble the egg into the stir fry.


When that is done, squish the bag of rice to break up any chunks and add to the mixture. Add soya sauce to taste – I like a little, OH likes more.


I portioned it into containers and combined with a strawberry sesame salad for OH to take to work.


This is a very simplistic dish. It is a good side dish and if you have time to use a better rice as the one I used isn’t the healthiest of choices that would be better. I just made do with the remaining food stuffs that I had. Adding sweet pepper and other fresh veggies would’ve been preferable.
