hellish relish

So I was going to post something different but I have done so much cooking that I am going to post a recipe for homemade relish. I made this with my mum and it wielded about 4 pints. That’s a lot of relish!


What you need;

  • 6 ripe cucumbers
  • 6 onions
  • 1 sweet red pepper
  • 1 small celery heart
  • 3 tbsps of coarse salt (we used sea salt)
  • 1 tbsp of dry mustard
  • 4 tbsps of all-purpose flour
  • 2 tbsps of curry powder
  • 1 1/2 tsp of turmeric
  • 1/2 tsp of paprika
  • 1 1/2 cups of sugar
  • 2 1/2 cups of vinegar

We used a food processor to chop the onions (we had 4 onions and 2 shallots actually) up and put them into a large bowl.


We peeled the cucumbers (I used Ontario Field Cucumbers) and chopped them up in the food processor as well. Also did the same for the celery.


Adding all the chopped veggies in the large bowl with the 3 tbsps of sea salt, we covered that and let it sit for 1 1/2 hours.


While that was standing, in another bowl I added the flour, spices and sugar and mix in 1/2 cups of vinegar to make a smooth paste, while boiling the other 2 cups of vinegar. (Quick note to use a large pot as you will be adding the veggies too)


Mix the paste and the boiled vinegar together. When the 1 1/2 hours is up, put the veggies in a strainer and rinse with cold water. Make sure as much water as possible is drained from the veggies and add them to pot with the vinegar in it and bring to a boil again. Let simmer for 6 minutes.


When it cools somewhat, start putting mixture into jars and leave lids off for a little while longer. You can use this relish for hot dogs, hamburgers and pork chops. My mum made some tuna salad with 2 tbsps of the relish, a can of tuna and 1 tbsp of olive oil. It’s a delicious relish for sure and easy to make!
