So it’s Friday! I have lots to do and this is my easy meal that is quick to prepare. It is BBQ season, OH and I don’t have a BBQ but that’s not my point. This means red meats and what not go on sale. This also means that you can stock up on ribs, hamburger, steaks and pork chops.
So here is a meal that needs the following things and ingredients – Serves 2 people (Sometimes 3 if you don’t have an OH that eats like mine);
- A crock pot
- 1/4 cup maple syrup (not table syrup – it’s not real)
- 1/3 cup garlic BBQ sauce (I used Kraft, but you can use any one you like)
- 1/8 cup of water
- Pork ribs ( I had 2 packs)
- 2 cloves of garlic – minced
- 2 mixing bowls
- Silicone basting brush
- Couscous for a side dish – you can choose any side you want though.
- 1 teaspoon of olive oil
- A little butter
- Greens and legumes for a salad – we had ginger and peanuts added to ours.
First I mixed the maple syrup and the BBQ sauce together in a bowl. I then put the water into the crock pot first and put a small amount of the maple syrup and garlic BBQ sauce concoction in the bottom and lay the ribs down. Use the basting brush to generously lather the ribs on the top and sides (Leave some for later). Put the lid on the crock pot and cook on high for 1 hour before turning the ribs over. I cooked the ribs for another hour on high and then on low for 30-40 minutes.
In the last 2 minutes I put equal amounts of couscous – someone said once that couscous was the food so nice, they named it twice. I personally agree – and water into a bowl (3/4 cup each) and added 1 teaspoon of olive oil. I cooked it uncovered on high for 1 1/2 minutes in the microwave, and then fluffed it with a fork and added butter to taste. I plated everything added the rest of the sauce to the ribs and because I am a bit of a weirdo, I don’t like my salad to touch my warm foods so I separate it into a bowl of its own. VOILA – DINNER! Delicious and OH approved!
